Squash Stuffed Baked Sole

Preheat oven to 350*  Take your zucchini and yellow squash and chop them up into tiny cubes.

Then finely chop your onion and garlic clove.  Saute all these items in a frying pan with enough

olive oil to coat the pan.  After these ingredients begin to soften add in your basil leaves (finely chopped)

and your cherry tomatoes which you should slice in half.  When all ingredients are lightly browned,

turn it off and remove from stove.  Spray a 9x13inch casserole dish with no stick spray.  Take each fillet

and stuff with your vegetable mixture and then roll the piece of fillet over (repeat for remaining fillets). 

Cover the fillets with the remaining vegetable mixture.  Then use whatever spaghetti sauce you wish

weather it's home made or one of your favorite jar brands.  You can also sprinkle some

parmesan cheese on top if you like.  Bake it in the 350* oven for about 35-40 minutes.
